Vermouth

Dry wine, oxidatively aged for years in American oak barrels using the traditional Solera and Criadera system.

This aging process entails oxidation from exposure to air oxygen, extraction of wood compounds, and concentration of components through transpiration and evaporation, resulting in the compounds that define its characteristic aromatic and flavor nuances.

Oloroso

Grape variety: Palomino Fino

An intensely amber-colored wine, exhibiting a warm, complex, and robust aroma underscored by toasted, spicy notes intertwined with nuances of nuts such as walnuts and the essence of noble wood, indicative of its extensive barrel aging.

On the palate, it delivers an elegant, full-bodied, and well-structured experience. Smooth and velvety, attributed to its high glycerin levels, it offers a long-lasting finish accentuated by significant nuances of noble wood.

Oloroso

Grape variety: Palomino Fino

Dry wine, oxidatively aged for years in American oak barrels using the traditional Solera and Criadera system.

Pedro Ximénez

This naturally sweet wine, aged oxidatively, is meticulously crafted from highly raisined Pedro Ximénez grapes, sun-dried (“soleo”), boasting exceptional sugar concentration.

Aged for years in American oak barrels using the traditional Solera and Criaderas system, it gradually develops heightened concentration and complexity of aromas and flavors over time.

Grape variety: Pedro Ximénez

Wine with a deep mahogany hue, showing iodized tinges and remarkable density. 

The aroma is deep, intense, and well-balanced, offering notes of honey, raisins, dates, figs, and other features such as toasted caramel, coffee, cocoa, or licorice, characteristic of its aging process.

On the palate, it exhibits smoothness and density, boasting a full body and pleasant acidity that complements the high sugar content. It boasts a remarkably long and flavorful aftertaste.

These two aging stages occur in American oak barrels over the years, following the traditional Solera and Criaderas system.

This is a mahogany-colored wine with a deep and well-balanced aroma. It has notes of noble wood and raisins and hints of caramel, coffee, honey, and cocoa. These elements become highly interweaved over time. 

On the palate, it is sweet, luscious, creamy, round, and well-balanced, with a subtle acidity. It exhibits typical Oloroso notes—nuts and noble woods—with sweet honey and raisin notes. It boasts a remarkably long and flavorful aftertaste.

Red Vermouth

Vermouth crafted with an extract of over 15 botanicals (herbs, spices, barks, and aromatic plants), cold-macerated and then blended with Palomino (dry, Oloroso type) and Pedro Ximénez (sweet) wines, previously aged for years in American oak barrels under oxidative aging.

Vermut Rojo

Grape variety: Palomino Fino / Pedro Ximénez

Reddish mahogany color. The aroma is refined, intense, and elegant, featuring citrus notes, oak wood undertones, and aromatic herbs like rosemary, thyme, and oregano with sweet hints of candied fruit and raisins, along with spicy notes of nutmeg, licorice, and clove.

On the palate, it showcases a remarkable balance between wormwood bitterness (typical of Vermouth) and the sweetness of ripe fruit, with notes of aromatic herbs, dried fruits, noble wood, aged sherry, a touch of citrus, and a long, lingering, slightly bitter aftertaste.

Vermut Rojo

Grape variety: Palomino Fino / Pedro Ximénez

Vermouth crafted with an extract of over 15 botanicals (herbs, spices, barks, and aromatic plants), cold-macerated and then blended with Palomino (dry, Oloroso type) and Pedro Ximénez (sweet) wines, previously aged for years in American oak barrels under oxidative aging.
